1 medium potato, coarsely grated
½ small onion, finely sliced
3 slices ham, finely sliced
1 clove garlic, finely chopped
½ cup grated cheddar
Salt and pepper
2 tbls flour
Butter for frying
Serves 1 for lunch, or 2 as an appetiser.
Mix all the ingredients except the butter in a large bowl. Preheat a griddle to 180C, melt a little butter then spoon half the mix onto the griddle and spread out to form a pancake no more than 5mm thick. Fry for approx. 2 minutes on each side. Cook the second half of the mix in the same way.
Serve straight, or with a little seasoned mayonnaise or sweet chilli sauce on the side.
