24 Marie Cookies
80g mixed dried fruit
1 ½ Tbs apricot liqueur
2 Tbs powdered sugar
12 Oreos, extra
Crush the cookies until they are finely powdered. Finely chop the nuts and fruit. Whip the cream until it stands in stiff peaks. Stir all the other ingredients into the cream until well mixed. Turn out onto some plastic wrap and form into a rough log shape. Cover in the wrap and refrigerate for several hours or over night.
When ready to serve, remove the wrap and roll the cake in crushed Oreos that have had the cream filling removed.
This cake can be made with any combination of cookies, fruit, nuts, or liqueur, Marie, Oreos, Coconut Sable, Sesame Sable, Danish Butter… peanuts, macadamia nuts, cashew nuts, almonds, walnuts… apricot liqueur, cherry brandy, limoncello, or vanilla essence. I have used fresh blueberries instead of dried fruit, and that worked well, except that the cake needed to be frozen rather than chilled to make it set. It made a wonderful ice cream cake. In fact, you could probably make this with ice cream rather than whipped cream. The only limit to its versatility is your imagination.
