Chocolate Chip Banana Cake

 2½ cups plain flour

  1 tsp bicarb soda

1 tsp baking powder

1 tsp cinnamon

1 cup sugar

1 cup chocolate chips

4 medium eggs

1 cup vegetable oil

1 Tbs golden syrup

1 cup buttermilk

1 tsp vanilla

1 cup mashed banana

Sift all dry ingredients together. 

Beat the eggs until fluffy, add the oil and beat 1 minute on high, add the golden syrup, beat until blended, add the buttermilk and vanilla and beat 1 minute.

Fold the ‘wet’ ingredients into the dry with the banana. 

Pour into prepared a large cake tin or two loaf tins and bake in a 190C preheated oven for 40-50 minutes, until a skewer inserted in the centre comes out clean.

*In place of Golden Syrup, use 1 tsp of milk molasses and 2 tsp of honey.
